L\u2019illa t\u00e9 una gran hist\u00f2ria culin\u00e0ria, \u00e9s rica en tradicions i professa un profund respecte per les mat\u00e8ries primeres que tant la terra com el mar ens aporta. Si mesclem mat\u00e8ria primera de qualitat i ess\u00e8ncia mediterr\u00e0nia, el resultat \u00e9s extraordin\u00e0riament exquisit. La cuina eivissenca \u00e9s assaborir aig\u00fces cristal\u00b7lines, fer un mos als camps torrats pel sol del mediterrani i tastar els seus vins i olis en un salt als temps en qu\u00e8 el menjar feia el gust que haver de fer. Es tracta d\u2019un plat dividit en dos temps: primer es prepara, amb peix fresc de la costa eivissenca com l\u2019<b>esc\u00f3rpora, l\u2019anf\u00f3s, o el gall de Sant Pere<\/b>, un brou de peix acompanyat d\u2019un sofregit de cebes, tom\u00e0quets, pebrots, alls i julivert i un bon raig d\u2019oli, seguit de porcions de patata eivissenca. Quan la patata est\u00e0 quasi llesta, s\u2019 inclouen els trossos de peix. Es serveix sobre una safata, traient el peix sense brou i s\u2019amaneix amb <b>una mescla d\u2019allioli i brou de peix<\/b>.<\/p>\n<p>Per al segon temps, utilitzem el brou de peix de la cocci\u00f3 per a preparar un arr\u00f2s a banda. Anys enrere, era un plat t\u00edpic que els pescadors preparaven a la seva barca els dies de pesca. Aquest es \u00a0fa a partir de la cocci\u00f3 de diferents peixos, patates i una picada tradicional d\u2019ametlles i nyores. Es serveix cald\u00f3s, a difer\u00e8ncia del <b>bullit de peix<\/b>, i no hi ha arr\u00f2s de segon plat.<\/p>\n<p><strong>Peix en Salmorra<\/strong><br \/>\nUna altra de les elaboracions t\u00edpiques \u00e9s el <b>peix en salmorra<\/b>. Es prepara amb una base de sofregit, oli d\u2019oliva i brou de peix. El peix fresc (anf\u00f3s, esc\u00f3rpora o d\u00e9ntol idealment) es cuina en aquesta salmorra \u00a0i habitualment s\u2019adorna amb pebre negre i suc de llim\u00f3. Si es cuina correctament, el peix mant\u00e9 tota la seva textura i el toc d\u2019oli d\u2019oliva i picant li aporta un sabor realment delici\u00f3s. Peixos amb gust de mar intens i de roca. Els peixos s\u2019elaboren de diferents formes: a la sal, al forn, fregit o a la graella principalment. llam\u00e0ntol o la gamba roja entre altres. Tots s\u00f3n d\u2019una gran qualitat.<\/p>\n<p>Per identificar la proced\u00e8ncia i autenticitat d\u2019aquests productes locals es va crear <b>Peix Nostrum<\/b>, la marca que agrupa les petites associacions de l\u2019illa d\u2019Eivissa. A Eivissa hi ha molta tradici\u00f3 de menjar peix en escabetx, un plat molt t\u00edpic de les cases de pescadors i un dels habituals en els dies de celebraci\u00f3, com a la matan\u00e7a del porc. Els peixos m\u00e9s utilitzats per aquest tipus de preparaci\u00f3 s\u00f3n el gerret, el gat\u00f3, les sardines o les cavalles i per a la seva preparaci\u00f3 \u00e9s necessari posar-li all, farina, llim\u00f3, julivert, oli d\u2019oliva, vinagre, pebre i llorer.<\/p>\n<p><b>Frita de polp o calamar<\/b><br \/>\nEl polp \u00e9s un dels ingredients estrella de la cuina eivissenca i aquest plat t\u00edpic \u00e9s tota una del\u00edcia. La frita de polp \u00e9s una de les tapes m\u00e9s t\u00edpiques de l\u2019illa d\u2019Eivissa i cada cop agafa m\u00e9s protagonisme, passant de tapa de bar a plat principal als millors restaurants de l\u2019illa. \u00c9s una recepta que evoca l\u2019Eivissa m\u00e9s tradicional, en qu\u00e8 la qualitat del producte \u00e9s imprescindible com a qualsevol plat mariner. La seva recepta \u00e9s senzilla, consisteix a preparar un sofregit de ceba, alls i pebrots vermells i posteriorment afegir el polp ja cuit i les patates.
